The Director of Food & Beverage will be responsible for the overall multi-unit foodservice operation for the hotel and conference center.

ESSENTIAL FUNCTIONS

 
  1. Management of high-volume, multi-unit hotel and conference center.
  2. Financially accountable for all food and beverage outlets, room service, banquets and culinary operations.
  3. Operates the department in accordance with the approved budget, maximizing the return for the Client
  4. Ensures that all food and beverage offered is of superior quality.
  5. Directs and conducts safety, sanitation, and maintenance programs (including EHA)
  6. Maintains excellent relationships with employees, guests, and Client as well as other departments within the operation and University.
  7. Able to handle responsibility for ensuring proper presentation, portion control, and maintenance of proper serving temperatures-follows HACCP standards
  8. Maintains close communication with the managers under the Food & Beverage Division and other department/division heads.
  9. Is an active participant within the Executive Committee, reporting directly to the General Manager.
  10. Will work with Controller and General Manager to establish budget in key performance indexes for all F&B units
  11. Reviews daily operating results and weekly forecasting and scheduling, taking immediate corrective action if required
  12. Maintains high visibility with associates, guests, and client.
  13. Conducts daily review of Food & Beverage Division hotel operations with Department Heads.
  14. Will attend hotel operational meetings, Food & Beverage departmental meetings, and associate-related events.
  15. Reviews annual objectives composed by department heads and monitors progress to completion over coming year.
  16. Monitors associate hires and disciplinary actions, spearheading overall recruitment in all F&B areas
  17. Mandatory adherence to the Platinum Service process on a daily basis.

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by management based upon the particular requirements of the company.

OTHER DUTIES
Assimilate PLATINUM SERVICE culture into department through understanding, supporting and participating in all elements of PLATINUM SERVICE. Demonstrate working knowledge of the service standards.

Regular attendance in conformance with the standards, which may be established by Flik from time to time, is essential to the successful performance of this position.

SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY
The individual must possess the following knowledge, skills. and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation:
  • Basic Property product knowledge, i.e., staffing, operations, safety, security, union rules, structural, terminology, fire, police and health codes, hotel policies, city ordinances.
  • Basic knowledge of the property structure/layout and how all departments interact
  • Basic knowledge of various types of set up styles used in the meeting rooms
  • Basic knowledge of audio visual equipment, telecom equipment, lighting and room temperature control
  • Extensive knowledge of banquet menus.
  • Extensive knowledge of market and related meeting industry.
  • Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to diffuse anger, collect accurate information and resolve conflicts
  • Quantitative processing of data via office machine equipment, mathematical computations and analytical skills necessary to accurately determine and communicate financial, forecasting and space utilization calculations.
  • Proficiency in the use and operation of computer systems with the ability to navigate efficiently through Word, Excel, Outlook, Delphi (or in house sales system), Market Vision, Internet and Intranet
  • Ability to read, write and speak the English language to fully comprehend guest requests, memos, proposals, general correspondence and similar written materials.
  • Possess a good conceptual understanding of electronic devices and the ability to operate such items as copy machines, slide projectors, microphones, computers, portable radios, pagers, etc.
  • Ability to complete a contract in compliance with all checklists, standards and property policies.
  • Interpersonal skills to provide overall guest satisfaction.
QUALIFICATION STANDARDS & EDUCATION
  • Minimum of Bachelor’s degree in Hospitality and/or Culinary degree
  • A minimum of 10 years progressive hospitality experience is required
  • Demonstrated profit and loss management ability and client relations success is essential
  • Requires operations management experience with purchasing knowledge
  • Excellent communication and computer skills are needed, including knowledge of Microsoft Suite and industry-related systems.
  • The individual must possess a demonstrated ability to manage others, including managers across different disciplines (including frontline associates).
  • Team player, motivator, detail oriented, innovator, and excel in project management
